Jicama, is a root vegetable native to central and south America. It is also known as the Mexican turnip. It is round and light brown in color. Once peeled it has a white flesh. It is crisp and refreshing to the bite. It is mostly eaten raw and accompanied by other fruits. Jicama has plenty of health benefits such as; Helps in managing weight, increase circulation, lowers blood pressure and manage diabetes among other benefits.
Light and refreshing summer jicama salad
1 jicama peeled and diced
2 tomatoes chopped
1 cucumber chopped
1 red and green bell pepper seeded and chopped
1 can of low sodium black beans drained and rinsed
1 can of whole corn drained and rinsed
1 jalapeno pepper seeded and diced
1/4 cup cilinatro chopped
1/4 red onion chopped
4 limes juiced
3Tbs. olive oil
1/2 tsp. salt and pepper
Combine all ingredients in a large bowl. Refrigerate and serve cold. Enjoy!
