Black Bean Quinoa Salad Recipe:
1 can black beans drained and rinsed
1 cup cooked tri colored quinoa
2 limes juiced
4 green onions thinly sliced
1/4 cup chopped cilantro
1 serrano pepper seeded and diced
1 tsp. cumin powder
1/2 tsp. salt
3 tbs. olive oil.
Combine all ingredients in a bowl. Mix thoroughly and refrigerate. Enjoy as a side dish or as a healthy snack.
